Motivational Monday's (2/11/19) - LUNCH, LUNCH, LUNCH!

Another Monday another recipe coming at you! 

Lets talks LUNCH! Lunch, is usually ALWAYS that meal in question. It's the meal in the middle of the day, the meal that you sometimes forget to eat OR make those less than optimal quick/fast food choices because all of a sudden you are starving and have nothing else with you. Whether it be because you are running errands, tirelessly working, driving the kids around etc.etc. we need to right away get rid of those excuses! That being said, it is ALWAYS good idea to have a delicious & nutritious "grab and go" lunch! Especially on those days where you do not have easy access to a microwave for your leftovers from dinner the night before... 

Enter the handy dandy, "Mason Jar Salad"! Below are four different ridiculously amazing salad recipes that you can EASILY weight, measure & pre-pack the night before to take with you for those days you are on the run! Large mason jars (16oz) can be found anywhere, Walmart, Bed, Bath and Beyond, Amazon! Pick one up and save your mental state, along with those macros and micros! No longer will you be caught empty or red handed (i.e making poor choices) ! 

Southwest Chicken Salad
1 tomato, diced
¼ cup diced cucumber
¼ cup corn
½ cup black beans
½ jalapeno, sliced (or you can do pickled jalapenos)
¾ cup diced, grilled chicken breasts
¼ avocado, sliced
1 cup of salad greens of choice (think kale, arugula, spinach, chard etc.) 

Chicken Quinoa Berry Salad
¼ cup quartered strawberries
½ cup cooked quinoa
¼ cup blueberries
¾ cup grilled chicken breasts, diced
¼ cup goat cheese crumbles
¼ avocado, diced
2 tablespoons almonds
1 cup of salad greens of choice (think kale, arugula, spinach, chard etc.) 

Greek Salad
1 tomato, diced
¼ cup cucumber, diced
½ cup chickpeas
2 tablespoons diced red onion
¾ cup diced grilled chicken breasts
¼ cup kalamata olives
2 tablespoons feta

1 cup of salad greens of choice (think kale, arugula, spinach, chard etc.) 

Thai Peanut Chicken Quinoa Salad
¼ cup red bell pepper
2 tablespoons green onion, diced
1 carrot, shredded
½ cup cooked quinoa
2 tablespoons cilantro, diced
¼ cup mango, diced
¾ cup grilled chicken breasts, diced
2 tablespoons chopped cashews

1 cup of salad greens of choice (think kale, arugula, spinach, chard etc.) 

Just like anything else, feel free and get creative. Mix and match or make create your own version of the mason jar salad! Dressings? Take with you in a small separate container, whatever you would like to use, pour in the jar once you are ready to eat, shake, and BOOM! Lunch is served!
